Now based in Iceland, she’s training to run 1,322 kilometers around the whole island—proving that discipline, heart, and belief can carry you anywhere.

Catherine is a wellness-driven runner, health-supportive chef, and certified health coach who began living her lifelong dream at 36. Born in Mexico City, raised in California, and now based in Iceland, she is passionate about the intersection of movement, nourishment, and healing.
Running has been part of Catherine’s story since childhood, inspired by her mother—a state champion sprinter, relays and speed with high jump in Mexico. In high school Catherine, she ran a 5:00 mile and was selected for the track and field team. Years later, after working in some of the world’s most acclaimed Michelin-starred kitchens, Catherine realized that the voice inside her—the one that longed to run—had never quieted. At 36, she made a bold decision: she left behind her career as a chef to pursue her lifelong dream of becoming a professional runner.
In the midst of personal transformation, Catherine made a powerful decision to run around the whole country of Iceland 1,322 kilometers (821 miles) by the summer of 2027.
Now, at 36, Catherine runs marathons, trains daily, and blends endurance with mindful nourishment. For her, running is about more than performance—it's about freedom, clarity, and returning home to yourself. Her wellness philosophy is rooted in balance: food that fuels, movement that heals, and self-belief that drives.
She finds deep inspiration in those who lead with humility and heart. As Faith Kipyegon once said,
“Follow your heart. Believe in yourself. No human is limited.”
And Catherine lives by the quiet power in Eliud Kipchoge’s words:
